The Best Bolognese (dairy free)

One of Beau's customers delivers the best beef we've ever had whenever he comes from Montana.. Its a real blessing as I've been adding just a little bit of meat back into my diet, when I crave it.  Ask my ex boyfriend.  If he remembers me from the 3 other girls he was seeing, he will tell you that I ordered bolognese whenever it was available.  It's kinda my thing and I haven't had it in a HOT minute because of the dairy factor.

So last night, I looked up a recipe for bolognese, knowing that I'd have to alter and here is my best shot at bolo!  I hope you enjoy!

Bolognese

 1 medium onion
1 lb ground beef
1 medium carrot
1 celery stalk
1 cup white wine (I used 2 buck chuck)
Big pinch black ground black pepper
1 bay leaf
Big pinch cinnamon
Big pinch chili flakes
Big pinch salt
Big pinch nutmeg
1/3 cup tomato paste
2 tablespoons bacon fat
1/2 cup cashew milk ( I used the homemade one I make for coffee)
2 cups beef broth (I used trader joes)
2 tablespoons miyokos vegan butter
1 package Jovial pasta ( I used fettuccini)
Rough chop, onion, celery and carrot. Put the onion in a food processor and zap until they're small chunks.  Do the same with carrot and celery (together) and put off to the side.
Add olive oil to a pan and add the beef.  Season with salt.  On medium high let it cool, not browning or crisping.  Stir every once in a while.  When its almost cooked through, still a little pink inside, remove from the pan.  Clean out the pan.
Add bacon fat and sauté the veggies until translucent.  Add the beef and white wine. Break the meat down into smaller pieces with a wooden spoon as the wine evaporates.
Add in the cinnamon, bay leaf, tomato paste, nutmeg, salt and pepper and let it cook for a minute stirring.
Add the cashew milk and broth.  Let it cook down on the lowest setting you have for 2ish hours or until most of the liquid has cooked out.  Make sure to check on it and stir occasionally. Take the bay leaf out. Add 2 tablespoons of vegan butter to the pan and mix in.
Boil your pasta water with lots of salt.  Cook to the package instructions. Add some pasta water to the bolognese sauce and turn the heat on low. Let the pasta water cook a little forming a little saucy situation.
Add the pasta with tongs from the water.  Let it cook together for a moment and serve!
